성큼 다가온 푸드테크…"로봇이 요리하고 서빙하고"

배민 자율주행 서빙로봇 68개 식당에서 85대 운용

CJ푸드빌 스마트 웨이팅 시스템 도입…달콤 무인 로봇카페 80개 운영

(서울=연합뉴스) 이한승 기자 = 식품 산업에 최첨단 ICT(정보통신기술)를 접목하는 '푸드테크'(Food-tech) 가 성큼 현실로 다가왔다.

인공지능(AI) 기술을 탑재한 로봇이 음식을 요리하거나 서빙을 하고, 24시간 운영이 되는 로봇 카페도 확대되고 있다.

푸드테크에 가장 적극적인 기업은 '배달의 민족'을 운영하는 우아한형제들이다.

우아한형제들은 ▲ 실내 자율주행 서빙로봇 '딜리플레이트' ▲ 실내 자율주행 층간이동 배달로봇 '딜리타워' ▲ 실외 자율주행 배달로봇 '딜리드라이브' 등을 운용하고 있다.

딜리플레이트는 지난해 11월 식당에서 처음으로 운용이 됐으며, 6월 기준으로 전국 68개 식당에 85대가 활동하고 있다.

딜리플레이트는 실내 레스토랑 전용 자율주행 로봇으로, 4개의 선반을 통해 한 번에 4개의 테이블에 음식을 제공할 수 있다.

점원이 딜리플레이트의 선반에 음식을 올려놓고 테이블 번호를 누르면 딜리플레이트가 주문자의 테이블까지 음식을 싣고 찾아간다. 도중에 장애물이 있으면 스스로 피한다.

우아한형제들은 올해 전국 200개 식당에 300대의 딜리플레이트를 제공하는 것을 목표로 하고 있다.

또 딜리타워는 자동문이나 엘리베이터와 연동해 건물 내에서 스스로 음식이나 물품을 배달하는 로봇이다. 지난해 10월과 올해 5월 서울 송파구 방이동 우아한형제들 본사에서 성공적으로 시범 서비스를 마쳤고, 연내 상용화를 목표로 하고 있다.

딜리드라이브는 지난해 11월 건국대학교 서울캠퍼스에서 테스트를 진행했다.

당시 테스트는 건국대 학생들이 음식이나 음료를 시키면 딜리드라이브가 식당에서 물품을 싣고 주문자가 있는 곳까지 배달하는 방식으로 진행됐다.

우아한형제들은 25일 동안 주문 수는 2천219건이었고 총 주행거리는 1천250㎞를 기록했다고 설명했다.

카페 달콤, 서울 장위동 아파트단지에 '로봇카페' 열어

(서울=연합뉴스) 카페 브랜드 달콤(dal.komm)이 23일 서울 성북구 장위동에 로봇카페 비트의 주거단지 매장인 '래미안 장위 퍼스트하이점'을 열었다고 밝혔다.

또 커피 브랜드 달콤은 AI 기술을 도입한 무인 로봇카페 '비트'를 운영하고 있다. 달콤이 운영하는 비트는 24시간 무인 운영이 가능하고 전체 매장 숫자는 80개에 달한다.

전용 애플리케이션이나 키오스크를 통해 주문할 수 있는데, 이 가운데 앱을 통한 주문의 비율이 70%에 달한다고 달콤은 설명했다. 음료가 완성되면 고객에게 알림 메시지가 간다.

메뉴는 커피와 주스 등 50여가지에 달하고, 특히 원두 선택과 시럽의 양, 진하기 조절도 가능하다.

주문된 음료는 로봇이 제조하고, 완성된 음료는 안전하게 보관된다. 아메리카노 기준으로 제조 시간은 약 30초에 불과하고, 10분 이내에 음료를 찾아가지 않으면 자동 폐기된다. 이 경우 1회에 한해 무료로 재주문이 가능하다.

달콤은 언택트(비대면) 분위기 확산으로 올해에만 20개의 매장이 새롭게 문을 열었다고 설명했다.

CJ푸드빌도 푸드테크에 기술력을 모으고 있다.

CJ푸드빌은 지난해 12월 빕스 등촌점에 요리하는 로봇 'LG 클로이 셰프봇'을 선보였다. 이후 CJ푸드빌은 지난 4월 빕스 광주 광천점과 안양 비산점, 인천 예술회관역점에 셰프봇을 추가 도입했다.

셰프봇은 동시에 최대 4그릇을 조리할 수 있어 업무 효율이 높다고 CJ푸드빌은 설명했다.

또 CJ푸드빌은 지난 1월 미국 라스베이거스에서 열린 CES 2020에서 LG클로이 서브봇을 선보였고, 2월 3일 제일제면소 서울역사점에 시범 도입했다. 클로이 서브봇은 실내 지능형 자율주행 기능으로, 최적의 동선을 파악해 고객에게 음식을 배달한다.

이와 함께 CJ푸드빌은 매장 입구에 있는 태블릿 PC에 이름과 연락처를 남기면 입장 순서에 맞춰 카카오톡 메시지를 발송하는 '스마트 웨이팅 시스템'을 도입했다.

고객이 테이블에 있는 태블릿PC에서 메뉴를 주문하면 직원이 스마트워치로 주문 내용을 확인할 수 있는 '테이블 오더'와 계산대에 제품을 올려놓으면 AI 스캐너가 제품을 인식하는 '객체 인식 스캐너'도 운용하고 있다.

이밖에 제너시스BBQ는 송파구에 주문부터 서빙까지 무인 서비스로 운영되는 헬리오시티점을 직영하고 있다. 이곳에서는 매장 입구에 설치된 키오스크나 테이블에 비치된 '태블릿 오더'를 통해 원하는 메뉴를 주문하면 푸드봇이 음식을 제공한다.
